Makes 14 large fritters
- 2 onions, finely diced
- 1 cauliflower
- 1 medium orange kumara
- 1cm fresh ginger, grated
- 2 eggs, beaten
- 3 scoops Herbalife Personalised Protein Powder
- 1 cup Besan flour
- 1 tsp. Baking powder
- 1 tsp. garam masala
- 1 tsp. ground turmeric
- ½ tsp. mild curry powder
- ¼ tsp. ground chilli powder
- Sea salt, Freshly ground black pepper
- 1 cup Water, use the steaming water
- Cut the cauliflower into large flowerets
- Peel and cut kumara into 1cm dice
- Steam the cauliflower over water until still firm, add kumara and steam for a couple of minutes
- Remove from heat and allow to cool slightly
- Cut the cauliflower into dice
- Mix all the ingredients together, adding more water if necessary
- Spoon into a frying pan and cook over gentle heat turning once
- Keep warm in a low oven until all mixture is cooked
- Serve with mango sauce and a salad
Mango Yoghurt Sauce
- 3 scoops Herbalife Mango aloe concentrate
- 1 scoop Herbalife French Vanilla Formula 1
- 3 scoops natural yoghurt
- Mix all together, keep refrigerated until needed
