Spiced Cauliflower & Kumara Fritters

Makes 14 large fritters

  • 2                              onions, finely diced
  • 1                              cauliflower
  • 1 medium            orange kumara
  • 1cm                        fresh ginger, grated
  • 2                              eggs, beaten
  • 3 scoops               Herbalife Personalised Protein Powder
  • 1 cup                     Besan flour
  • 1 tsp.                     Baking powder
  • 1 tsp.                     garam masala
  • 1 tsp.                     ground turmeric
  • ½ tsp.                    mild curry powder
  • ¼ tsp.                    ground chilli powder
  • Sea salt, Freshly ground black pepper
  • 1 cup                     Water, use the steaming water
  1. Cut the cauliflower into large flowerets
  2. Peel and cut kumara into 1cm dice
  3. Steam the cauliflower over water until still firm, add kumara and steam for a couple of minutes
  4. Remove from heat and allow to cool slightly
  5. Cut the cauliflower into dice
  6. Mix all the ingredients together, adding more water if necessary
  7. Spoon into a frying pan and cook over gentle heat turning once
  8. Keep warm in a low oven until all mixture is cooked
  9. Serve with mango sauce and a salad
