Mixed Vegetable Fritters

Makes 6 Fritters,  Time: 15 minutesvegfritter

  • 300 g frozen mixed vegetables, defrosted
  • 1tblsp. fresh chopped coriander
  • 1 red chilli, finely diced
  • zest 1 lemon
  • 2 free range eggs
  • 1 ½ tablespoons buckwheat or Besan flour
  • 2 scoops personalized protein powder
  • 1tsp.    baking powder, gluten free
  • Pinch of sea salt and pepper
  1.  Combine the mixed vegetables into a bowl with coriander, egg, lemon zest and chilli
  2. Add protein powder, Besan flour and baking powder.
  3. Season with salt and pepper then taste to check.
  4. Heat a pan over a low heat with a little olive oil.
  5. Cook spoonfuls of pea fritter mixture much as you would pikelets or small pancakes.
  6. REMEMBER – It’s important to cook them over a low gentle heat on each side until golden and cooked through.
  7. Serve with a squeeze of lemon and enjoy.
