Makes 6 Fritters, Time: 15 minutes
- 300 g frozen mixed vegetables, defrosted
- 1tblsp. fresh chopped coriander
- 1 red chilli, finely diced
- zest 1 lemon
- 2 free range eggs
- 1 ½ tablespoons buckwheat or Besan flour
- 2 scoops personalized protein powder
- 1tsp. baking powder, gluten free
- Pinch of sea salt and pepper
- Combine the mixed vegetables into a bowl with coriander, egg, lemon zest and chilli
- Add protein powder, Besan flour and baking powder.
- Season with salt and pepper then taste to check.
- Heat a pan over a low heat with a little olive oil.
- Cook spoonfuls of pea fritter mixture much as you would pikelets or small pancakes.
- REMEMBER – It’s important to cook them over a low gentle heat on each side until golden and cooked through.
- Serve with a squeeze of lemon and enjoy.
