Late Spring Protein Salad

  • 2 spring onion stalks, sliced finelylatespringsalad
  • 2 sticks Celery, fine slice
  • 1 red capsicum diced
  • 2 carrot, peeled, diced
  • ½ telegraph cucumber, quartered lengthways, sliced
  • 3 red radish, quartered, sliced
  • 2 vine ripened tomatoes, peeled, deseeded and diced
  • 1 bunch small Asparagus, sliced and blanched
  • 1 can 4 bean mix in spring water, rinsed and drained
  • 2 eggs, hard boiled, whites diced, yolks sieved for garnish
  • ½ pkt baby kale leaves
  • 2 Tbsp. parsley, roughly chopped

 Dressing

  • ½ lemon, Juiced
  • 3 Tbsp. Herbalife Mandarin Aloe Concentrate
  • 50ml extra virgin olive oil
  •  ½ red onion, finely diced
  • 1 clove garlic, fine chopped
  • 1 red chilli, seeds removed cut in fine dice
