No Bake Coconut, Vanilla and Apricot Slice

  • ½ cup almond meal
  • ½ cup coconut flour
  • 1 cup shredded coconut, blitzed until fine
  • 6 scoops Herbalife Vanilla F1
  • 50ml orange flour water
  • – 1 cup Dried Apricots, small dice
  • 150ml cold water, approximately


¼ cup dried apricots – fine dice for decorating


  1. Line a tray approx. 22cm with baking paper.
  2. Mix all the dry ingredients in a bowl
  3. Add the apricots
  4. Add the orange flower water
  5. Add enough cold water to make the mixture come together in a slightly damp, not wet dough
  6. Press into the lined tin and refrigerate until firm.
  7. Mix the icing ingredients together and pour over the base
  8. Sprinkle with diced apricots
  9. Return to refrigerator to set, preferably overnight
  10. Using a warm serrated knife carefully cut into squares or rectangles
  11. Store in freezer
