Ingredients
- ½ cup almond meal
- ½ cup coconut flour
- 1 cup shredded coconut, blitzed until fine
- 6 scoops Herbalife Vanilla F1
- 50ml orange flour water
- – 1 cup Dried Apricots, small dice
- 150ml cold water, approximately
Icing
- 6 scoops Herbalife Vanilla F1
- ½ lemon juiced
- 75ml cold water
- 100ml Coconut oil
¼ cup dried apricots – fine dice for decorating
Instructions
- Line a tray approx. 22cm with baking paper.
- Mix all the dry ingredients in a bowl
- Add the apricots
- Add the orange flower water
- Add enough cold water to make the mixture come together in a slightly damp, not wet dough
- Press into the lined tin and refrigerate until firm.
- Mix the icing ingredients together and pour over the base
- Sprinkle with diced apricots
- Return to refrigerator to set, preferably overnight
- Using a warm serrated knife carefully cut into squares or rectangles
- Store in freezer
