Herbie Vegetarian Carrot Almond Slice

Ingredientscarrot slice

  • 2 cups grated carrots
  • 1 zest of lemon
  • 1 cup pitted dates, soaked
  • 1 cup almond meal
  • ½ cup flaxseed ground
  • ½ cup psyllium husk
  • 6 scoops Herbalife French Vanilla F1
  • ½ tsp. ground cinnamon
  • ½ cup coconut oil

Icing

Preparation

  1. Soak the dates in a little boiling water, cool and blend into a date paste.
  2. Mix almonds, F1, flaxseed, psyllium husk and cinnamon
  3. Grate the carrots, add lemon zest and mix in a large bowl with the date paste
  4. Add dry ingredients.
  5. Liquefy the coconut oil, add to the mix and blend again.
  6. Pour the mixture into a baking paper lined 27cm x 20cm slice tin, smooth the top
  7. Put it into the freezer to set.
  8. Spread icing over the top and return to freezer
  9. Cut with a warm knife
  10. Turn out
