- 2 cups grated carrots
- 1 zest of lemon
- 1 cup pitted dates, soaked
- 1 cup almond meal
- ½ cup flaxseed ground
- ½ cup psyllium husk
- 6 scoops Herbalife French Vanilla F1
- ½ tsp. ground cinnamon
- ½ cup coconut oil
Icing
- 3 scoops Herbalife French Vanilla F1
- 2 Tbsp. fresh lemon juice
- 3 Tbsp. coconut oil
Preparation
- Soak the dates in a little boiling water, cool and blend into a date paste.
- Mix almonds, F1, flaxseed, psyllium husk and cinnamon
- Grate the carrots, add lemon zest and mix in a large bowl with the date paste
- Add dry ingredients.
- Liquefy the coconut oil, add to the mix and blend again.
- Pour the mixture into a baking paper lined 27cm x 20cm slice tin, smooth the top
- Put it into the freezer to set.
- Spread icing over the top and return to freezer
- Cut with a warm knife
- Turn out
