Serves 18
- ¾ cup dates, cut into quarters
- 1 cinnamon stick
- 3 tablespoons Almond meal
- 2 tablespoons Psyllium Husks
- 1 tablespoons brown rice malt syrup
- 1 teaspoon ground ginger
- ½ teaspoon ground cinnamon
- ½ teaspoon ground allspice
- 9 scoops Herbalife F1 cookies and cream
- 2 scoops Herbalife Personalised Protein powder
- 6 dried apricots, cut in small dice
- ½ cup shredded coconut
Preparation
- Put dates into heat proof bowl with the cinnamon stick, pour boiling water over and let soak overnight
- Remove cinnamon stick, discard.
- Put the dates and liquid into food processor, blend until smooth
- Add all of the ingredients, except apricot and coconut, together into the food processor.
- Blend until it has turned to a smooth paste.
- Place in a bowl into the freezer for a few minutes to make it easier to handle.
- Remove from the freezer, fold in apricots and separate into balls.
- Gently roll each one to form a neat ball, but be careful as it becomes very sticky if handled too much!
- Roll each ball in the coconut place onto greaseproof paper in the refrigerator to firm up.
- Store in the fridge and eat as you please. They will last for around five days in the fridge.
